If you’ve never made waffles with freshly milled einkorn flour, you’re missing out on one of the most nutritious, sweet breakfasts out there. Einkorn waffles are light yet satisfying, and the flour brings a nutty richness that boxed mixes just can’t match.

Why Einkorn?

Einkorn is one of the oldest and most nutrient-dense grains — packed with protein, B vitamins, and easier to digest than modern wheat. When milled fresh, einkorn flour retains its full nutrition, flavor, and naturally sweet aroma. It’s my go-to for gentle breakfasts that feel like a treat but nourish like a meal.


Recipe:

Dry Ingredients (Or use our pre-measured mix):

  • 2 cups freshly milled einkorn flour
  • 2 tsps baking powder
  • ½ tsp baking soda
  • 1 tsp sea salt
  • 2 tbsps cane sugar

Wet Ingredients:

  • 2 eggs
  • 1 ½ cups milk
  • 4 tbsps melted butter or coconut oil
  • 2 tsps apple cider vinegar or lemon juice
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Whisk together wet ingredients in a bowl.
  2. Add dry mix and stir gently until just combined.
  3. Let rest 5 minutes while your waffle iron heats.
  4. Cook until golden. Serve warm with butter and real maple syrup.
  5. Freeze extras for quick breakfasts!

Tips for Freezing Waffles:

  • Let them cool completely.
  • Place in a single layer on a baking sheet and freeze for 30 minutes.
  • Transfer to a freezer bag or airtight container.
  • Reheat in a toaster or oven at 350°F for 5–7 minutes.
